Resistant starch
Starchy foods cooked then chilled: yesterday's rice or potatoes, green banana, legumes in a salad…
- Why?
- Cooling “retrogrades” the starch into resistant starch, which the microbiota ferments into butyrate — the favorite fuel of colon cells.
- Tip
- Cook the day before for the next day; gentle reheating does not destroy the resistant starch that has formed.
- Counting
- It is the CHILLING that counts, not the food: rice, pasta, potatoes or legumes cooked then chilled for at least a few hours. Served hot, they do not tick this category.
- The app's landmark
- A serving of about 50 g, every 3 days.
- Molecules
- Resistant starch RS1 · Resistant starch RS2 · Resistant starch RS3
