Spaghetti squash
Cucurbita pepo
vegetable
Flesh that falls apart into strands when cooked: lots of water and gentle fibers, very little starch.
- Origin
- Central America, selected in Japan
- Season (United States)
- September to January · grows in your region
- Preparation
- The skin is not eaten; the seeds are, roasted. If it is truly bitter, throw it out without tasting more: that is cucurbitacin, which makes you seriously ill, and cooking does not remove it.
- Did you know?
- A simple stroke of a fork is enough to loosen its strands — hence its name.
