Lemon
Citrus limon
fruit
An oblong, pointed fruit 8 to 12 cm long, green then yellow, with sour pulp and a thick fragrant rind, born of a cross between citron and bitter orange. Rich in vitamin C — 53 mg per 100 g of pulp —, it also brings pectin and flavanones.
- Origin
- Foothills of the Himalayas
- Season (United States)
- all year round · grows in your region
- Preparation
- The zest is eaten from an organic or untreated fruit: others are coated with wax and fungicides that washing does not fully remove. The white pith beneath holds the pectin; the pips are removed for their bitterness. Freshly squeezed, its juice keeps much more vitamin C than bottled lemon juice: it does not like heat or time.
